Ladies (cupcake) Night

Nothing is better then your three best friends, copious amounts of white wine, and some delicious vanilla cupcakes.

I got together with Dannica, Danielle, and Jamie for a wonderful and much-needed ladies night! A quick Google search, some improvisation, and an impressive pastry bag, we baked some delicious cupcakes.

Vanilla cupcakes à la Rolo with buttercream frosting 

Adapted from Joy of Baking


1/2 cup unsalted butter, room temperature

2/3 cup granulated white sugar

3 large eggs

1 teaspoon pure vanilla extract

Zest of 1 large lemon

1 1/2 cups  all purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/4 cup (60 ml) milk

Bag of Rolos

Preheat oven to 350 degrees F and line 12 muffin cups with paper liners (zebra ones are cool…)

Beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add in the vanilla extract.

In a separate bowl whisk together the lemon zest, flour, baking powder, and salt.

Add the flour mixture and milk, in three additions, beginning and ending with the flour. Scrape down the sides of the bowl as needed.

Place one Rolo in each cup

Evenly fill the cups with the batter and bake for about 17 – 20 minutes

Remove from oven and place on a wire rack to cool (or dump them in the freezer like we did…).

Frost cupcakes and pretend like you know how to use a pastry bag!


2 cups confectioners sugar

1/2 cup unsalted butter, room temperature

1 teaspoon pure vanilla extract

2 tablespoons milk or light cream

Mash the butter until smooth and well blended.

Add the vanilla extract and gradually beat in the sugar.

Add the milk and beat until frosting is light and fluffy.

Add a little more milk or sugar, if needed. 

Optional: Eat many cupcakes and then go to a Karaoke bar. Four girls singing “Girls Just Wanna Have Fun” is a must to end a cupcake night perfectly…
